Baked Potatoe Soup

This soup makes about 4 servings.

INGREDIENTS:

2 large baking potatoes
3 sliced green onions
3 tbsp butter
3 tbsp all-purpose flour
3 1/2 cups milk
1/2 cup fat free or low fat sour cream
1 1/4 shredded cheese (I used cheddar)
4 slices bacon, crisp cooked, drained, and crumbled
salt, pepper, and garlic powder to taste

DIRECTIONS:

Cook potatoes in oven at 425 degrees for about 40-60 minutes or until tender; cool. Cut each potatoe lengthwise. Scoop out white portion of each potatoe. Cut potatoe into pieces and set aside.

In a large saucepan cook 1/2 of the green onions in butter over medium/low heat until tender. STir in flour, garlic, salt, and pepper. Add milk all at once along with the sour cream. Cook and stir for 12-15 minutes or until thickened and bubbly. Add potatoe and mash to the consistency you prefer. Stir in 1 cup of the cheese and stir until melted.

Top each serving with the remaining cheese, green onion, and bacon.

This was a pretty easy soup to make and me and Chris LOVED it with some crusty bread!
